Aloha!

Welcome to Coffee and Coconuts, my name is Amie, and I created this blog so that family and friends can follow my adventures here in Maui, as well as my journey of health and healing!

I am 24 years old, and recently moved from my home in Denver, to Maui with my love, best friend, and husband of almost 1 year(!!!), Erik!

We dreamed of moving to Hawaii since we first began dating almost 4 years ago! Crazy how time flies! But we were finally able to make it happen and we couldn’t be happier.

Anyways, I am extremely passionate about health and fitness, which is one of my main motivations behind starting this blog! My story is a long one that I will go into more deeply as time goes on, but basically I have been enthralled with the idea of achieving optimum health and wellness for about the past 8 years. I am constantly learning more and more about these topics, and my view of them is almost constantly changing.

To give you an example, my idea of ‘health’ during my Freshman year of college included lean cuisine, diet soda, and running 5 miles, every.single.day.
Lets just say things have changed quite a bit since then…

My view of health these days focuses on eating real, unprocessed, and local food as much as possible, and embracing the fact that I usually don’t feel like running very far. Hah.
This also means not being too hard on myself when I find myself eating foods that are not exactly nutritious.

Since this blog is based on things I love (coffee and coconuts- duh) I thought I’d start an ongoing list of things that I love to give you a better idea of who I am and what this blog will be about…so here it is so far: my husband, my family, god, animals!!! (Specifically chihuahuas, goats, and monkeys)

Sushi, Starbucks, frozen yogurt, yoga, laughing, SUP, snorkeling, pedicures, massages, trashy reality TV (real housewives, anyone?) holidays, birthdays, basically any kind of party, margaritas, prosecco, watermelon, avocados…ok I guess that’s good for now 🙂
