What I Ate Wednesday!

Since I’m sure I can’t be the only one who likes to see pretty pictures of other people’s food and get recipe ideas, I compiled a list of my favorite eats from the past week to share with you!
Here we go!

Chia Seed Pudding

Looks super weird but tastes amazing! Plus, chia seeds are high in calcium, fiber, and 3 tablespoons contain more omega-3 fats than salmon!
This is the recipe I used-
3 tbsp chia seeds
1 cup almond milk
Splash of vanilla
Lots of cinnamon
1 packet stevia

Let the mixture sit overnight in the fridge and top with a banana/ nuts/ fruit etc. for breakfast! It kind of reminded me of eating cold oatmeal or cereal, except much more nutrient-dense.

Antioxidant Smoothie!

I’ve been drinking this smoothie about twice a day, I’m addicted! Plus, it is super easy to make. I don’t really use a recipe, but I put about 1 cup of antioxidant berry blend (from Costco), 1 cup of almond or coconut milk, and a few ice cubes. That’s it!

Purple Hawaiian Sweet Potatoes

These are sooooo delicious! For those of you who like sweet potatoes, these are even better! I have been cooking up a bunch of them about once a week with a little coconut oil and cinnamon. Then I split them up into a few containers so I have an easy snack to grab throughout the week. They are great plain, or topped with some almond butter πŸ™‚

Local Grass-Fed Steak

I was super excited when I found this! Unfortunately it didn’t turn out as great as I had hoped, but I’m going to keep experimenting. Anyone else notice that grass-fed beef is much tougher? Probably because the cows aren’t fed candy bars and gmo corn. Hmmm.
